This is what we commonly called snow fungus, whose scientific name is Tremella fuciformis. There is a wide range of bioactive compounds found inside the small snow fungus, including fatty acids, proteins, enzymes, polysaccharides, phenols, flavonoid, dietary fiber and trace elements. In daily life, snow fungus is widely accepted in Chinese cuisine, It gives the unique soft texture when eating, and promotes health. In taxonomy, it is put at the phylum Basidiomycota, class Tremellomycetes. Microscopically, the hyphae are clamped and occur in a dense gelatinous matrix.
