Clitoria ternatea 蝶豆 belongs to Fabaceae 蝶形花科. The dried flowers are commonly used to brew flower tea. The blue colour of the flowers can be attributed to presence of the anthocyanins in petals. Anthocyanins was extracted by soaking the dried flowers in tap water overnight. When lemon juice was added, the extract turned magenta, which is the colour of anthocyanins in acidic pH.
